Head of Food and Health
AZTI: Marine & Food Research Centre

Sara Arranz leads the Precision Nutrition line. She holds a PhD in Pharmaceutical Sciences from the Complutense University of Madrid and has more than 20 years of experience in nutrition, food science, and health research. Her work focuses on integrating omics technologies (lipidomics, metabolomics, microbiome), biomarker discovery, and AIenabled digital tools to understand how diet modulates metabolic, cognitive and cardiovascular health across the lifespan.

Sara has coordinated or participated in more than 25 competitive national and European research projects, including CoDiet (Horizon Europe) with AZTI as coordinator, as well as large initiatives on healthy ageing, metabolic diseases, obesity, and personalised dietary interventions. She has an extensive scientific track record with over 50 peer-reviewed publications, particularly on food bioactive compounds, omega-3 fatty acids, Mediterranean diet, obesity, and cardiometabolic risk.

Her research group has generated significant evidence on the benefits of seafood and fish-derived nutrients on health, including the molecular effects of omega-3 fatty acids on cell membranes, inflammation, and lipid metabolism in different population groups. She has also contributed to clinical studies demonstrating the impact of dietary patterns on health. In parallel, she works closely with industry to develop evidence-based nutritional solutions, personalised health services, and innovative products that respond to emerging consumer needs, combining scientific rigor with technological innovation.

Sara is actively involved in communication activities and participates in advisory and expert discussions on nutrition and health at the European level.
